Chocolate Hazelnut Brownies with Chocolate Cream Cheese Frosting

Ingredients

For the Brownies:

3 Sticks Unsalted Butter

2 Cups Cocoa Powder

6 Large Eggs

2 Cups Sugar

2 Cups Packed Light Brown Sugar

2 Tablespoons Pure Vanilla Extract

2 Cups Flour

1 Teaspoon Salt

1 Cup Hazelnuts, Chopped

1 Cup Dark Chocolate Wafers, Chopped

For the Frosting:

8 Oz Cream Cheese, Softened

1 Cup Sugar

1 Cup Dark Chocolate Wafers

1/4 Cup Milk

1 Tsp Cook's Hazelnut Extract

Pinch of Salt

Directions

For the Brownies:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Grease a 13X9 Baking pan with Butter.
  3. In a medium saucepan, melt the butter and then whisk in the cocoa powder until the mixture is smooth.
  4. In the bowl of a mixer, mix together the eggs and the sugars until the mixture is light in color and the sugars are mostly dissolved.
  5. To the egg mixture, gradually add the cocoa and butter mixture. (If the cocoa/butter is still hot, make sure to temper the eggs by adding just a tiny bit of the cocoa mixture first and then gradually increasing the amount while mixing vigorously to avoid cooking the eggs.)
  6. Add in the pure vanilla extract.
  7. Add in the flour, salt, nuts, and chocolate, mixing by hand until all the flour is integrated and the additions are evenly distributed.
  8. Add the batter to the pan and bake for 40-50 minutes until a toothpick comes out clean when inserted in the middle.
  9. Let cool completely.

For the Frosting:

  1. In a saucepan, melt together the chocolate and the milk.
  2. In the bowl of a mixer, mix together the cream cheese, sugar, melted chocolate, hazelnut flavoring, and salt.
  3. Once the frosting is smooth. Gently frost the top of the cooled brownies.
